  • 2 boneless chicken breasts
  • ½ tsp of salt
  • ½ tsp of black pepper
  • ½ tsp of garlic powder or 3 minced garlic cloves
  • Dash of olive oil
  • 1 cup of almond flour
  • 1 tbsp of paprika
  • ½ tsp of cayenne pepper

Healthy Chicken Nuggets

You'll be surprised by how much these taste like real nuggets.
  1. Preheat the oven to 350°F (180°C). 
  2. Add the dry ingredients to a bowl (almond flour, paprika, cayenne pepper, ¼ tsp of salt, ¼ tsp of black pepper) and mix.
  3. Dice up your chicken breasts and add to a food processor.
  4. Before mixing, add ¼ tsp of salt, ¼ tsp of black pepper ½ tsp of ½ tsp of garlic powder or 3 minced garlic cloves to the chicken and turn on the food processor. Mix until the chicken has been minced.
  5. One by one, take a pinch of chicken, roll into a small ball and flatten to make a nugget shape.
  6. Press the nuggets into the almond mixture and coat both sides. 
  7. Once you have coated them all, lay the chicken pieces on parchment paper and put the chicken in the oven.
  8. Cook the chicken for around 25-30 minutes. (Your oven might vary, so be sure to check the chicken often and not overdo the chicken. Either way, it should be white and juicy on the inside).
  9. Season with some salt and black pepper and serve with your favourite condiment.
