Cut each potato into thick-style fries. (This prevents them from breaking up).
Preheat the oven to 390°F (200°C).
Now, add the chopped potatoes to a pot of water and bring to a boil.
Keep boiling the potatoes for about 5 minutes or until the edges being to soften (we only want to 50% cook the potatoes).
Drain the water from the semi-cooked potatoes and rattle the pot with the lid on it until the edges of the semi-cooked potatoes start to fluff. Don't overdo this, as the potatoes will break apart too much. This gives the potatoes a crunchier finish when we cook them in the oven.
Now, coat the fries in about 2 tablespoons of olive oil.
Lay the fries flat on a sheet of parchment paper.
Put the fries in the oven and let the chips cook until they have browned and crisped on the outside. Usually, this takes around 35-45 minutes. (This will vary depending on the size and variety of your potatoes).
Once the fires are cooked to your liking, take the fries our of the oven and transfer to a large pot or bowl.
Dust with sea-salt, white pepper, cayenne pepper, and paprika and then serve.
